They also age outside Celestia. Really, the only thing in which they're different from humans outside Celestia is that they can transform, nothing else. In fact, I wonder if the reverse happens too and humans become more powerful in Celestia...
Also I think it's kind of a wasted opportunity - I mean, there was just a dungeon and that's it. Imagine if Celestia was in mk2 and had its own dungeons happening there (and multiple, not just one), that'd have been interesting =P (though probably conflicting with the graveyard idea...)
