I like having Infinite Invisibility, Bound Dagger+Armor, extra strength, and more too much too have lost it in Oblivion.
Self enchanting was still in game, albeit limited in the forms in sigil stones, and you could still pay to enchant your stuff with whatever effect you liked, provided you had worked your way into the Arcane University via the Mages Guild. In fact, enchanting armour with constant effects got much easier, as it was all you could with armour and didn't require a significantly large soul anymore.
You do know you fairly easily make infinite 100% chameleon in Oblivion right? It's as broken as it sounds.

That's why I preferred using (un)limited enchanting. One could easily "live" as a hermit once you got to a high enough level to survive the outdoors. No bullshit guild work required
Besides, it wasn't too hard to get Azura's Star and then kill a Golden Saint. There's your Constant effect now.
(Sometimes, just sometimes, broken gameplay is actually a good thing).

The environments look pretty boring.

Well, Skyrim is effectively Scandinavia as far as nearest real-world equivalents go, as Nords are essentially Vikings, so there's the mix of snow, mountains, tundra, and alpine forests.
