I'm a huge fan of FF VII, but when I put the CD on my PS3 for re-re-re-re-re-re-re-playing it, it took a great amount of patience to go through the first 20 minutes. All because of the graphics
That being said, I found that every Persona game has its strong points:
Persona 2: The story's just... insane. But in a good way. The others have already said it and I fully agree:

The only exception was P1, which I actually found kinda boring. But it's probably just me.
So, if you keep in mind that P1 and P2 are a lot different from P3 and P4, I would say that you can start from the one which appeals you the most
