I managed to escape from a lurker, but I was really scared. She attacked first and almost killed all my characters.

That's precisely what happened to me. I was moseying through a dungeon minding my own business level grinding and searching for treasure and suddenly I see this text on the screen, that says you sense an evil aura or something to that extent. Even my party members seemed to be concerned. Naturally I was frightened too as I didn't know what to expect. Promptly after wards I get into an enemy encounter with what I assumed to be a random boss character. Being as complacent as I was at the time I attempted to engage it in combat, there by sealing my fate as the enemy proceeded to carve my party into luncheon meat. Luckily one of my characters knew escape otherwise I would have been a Demon Dog sandwich.

Always have someone with escape. I learned that early on. Also, it's great for taking out lurkers, cause they can't heal as long as you don't leave the dungeon. So, what I would do, is have everyone take their turn and attack, except the last person, who would escape. This way, the lurker would only hurt one person. I would heal that person, wander around, fight the lurker, and repeat. Until it was killed.

Even so, that's way too hard. Lurkers usually have an attack that target my whole party, and only 1~2 characters remain alive.

As far as I know, if they surprise attack you they don't use AOE, at least that was my experience in going lurker hunting. So, if they surprise attack you, one Person gets hurt really bad, You have 3 people attack the lurker, then the fourth use escape. Heal that one person, find the lurker, repeat.

Well, I'll wait until the end of this playthrough before I take on lurkers. Until then, I'll keep escaping like a wise Prinny, dood!

Just keep a character equipped with the escape skill and you won't have to worry about it.

If you can beat them at a low level you'll gain tons of experience. You actually level up rather easy in this game in general.

I really can't even scratch them, but it's okay for now. Oh, and I'm not underleveled, they're the ones overleveled.

There is actually a way to avoid lurkers in the game. My cousin was the one to discover it and showed me how to perform the trick. I have a video made to show how to perform the trick but because it's my cousin who discovered it, I'll need permission to upload it. I'll give you a hint though. It involves with just standing still. See if you can figure out "where" to stand. Works in most dungeons.

To be completely honest I can't trigger the Lukers even if I want to.

I try and try but very seldomly do they attack me, they're really not a problem for me...but I'm trying to fight them! >_< They give the most points at the end of a dungeon!
