Any tips on the last boss? (The Orb) One of it's attacks practically kills my entire party!
I think I'm around lvl 78 or so. Do I need to grind more?

Finishing True End with such a low party means extensive usage of the convert shop,which isn't an option if you wanna play the game normally.
And yes,levels DO make a difference.I had tried to kill the final boss of Kanata's Best End and got wiped by the first turn,then got 3-5 levels for each member of my party and I beat him pretty easily.

The Convert Shop isn't even available in your initial run, so it's not an option period. Completing the game at a "low level" isn't unusual, True End or otherwise. I personally just found the game to be a bit on the easy side.
And of course levels in general make a difference, but I personally haven't noticed a significant difference from being level 78 and 80.

I actually just got the true True End recently, I did have all the character's ultimate weapons but that was it. I don't remember how you get their best weapons (convert shop or synthesis) but I was only level 80 something. Yes I had meteorites equipped but you can only get so strong through meteorites, even the dlc ones are limited and don't make up for the supposedly 100 levels I was missing, a recommended level that high I'd say is for the extra cautious.
